I think it would be interesting to see all creatures(including humans) be able to become trophies. Also instead of just heads, maybe full animal trophies. This could be combined with 120 carpentry to make items more rare.

Game art is limited to what could possibly be used for mounting heads/fish. Statues are your best bet.

Taxidermists can make aquarium fish decorative.
Cooks can make sushi out of aquarium fish. (small mana boost when consumed)

We have just created all the heads we could mount. Orc, Troll, Brown Bear, Polar Bear, Gorilla, Fish and deer. I would like to see more animals that we could mount. Reverant Lion, Cougar, eagle etc.

I don't think anyone wants to get into creating custom artwork for those said above. There are newer mounted fish from the expansions and a few other things already in the art. You can view the content using pandoras box, other programs like it, and sadly the Inside UO doesn't work anymore. Or I'm just totally wrong and you can just ignore this message.
